March 1st is National Peanut Butter Day! Peanut butter was always a staple food in my home. It’s inexpensive and it’s packed full of nutrients. Plus, there’s so many different types of recipes that have peanut butter as a main ingredient, in naming them all I would sound like Bubba sounding off shrimp recipes.

This little legume is a powerhouse packed with protein, fiber, vitamins, minerals, and phytochemicals. While peanut butter may be a high-fat food, it is really good for you. Monosaturated fats help promote heart health, and the combination of the protein and fiber help you stay satiated for a longer period of time. In fact, 1.5 ounces of peanut butter per day may reduce your risk of heart disease.

The Skinny On Peanut Butter:

Per one serving (1 oz. or 2T)

3 mg Vitamin E
49mg magnesium
208 mg potassium
0.17 mg Vitamin B6
